FALL IN LOVE WITH COOL SEASON VEGETABLES
Autumn has arrived which means a new assortment of in season vegetables will be showing up at your local grocery store and farmers market!
Staying up-to-date with the produce in season ensures you are purchasing food items that are affordable, fresher, and tastier than foods that are out of season.
Here are a few examples of in-season vegetables:
Beets: If you’re looking to spruce up your salad with color and provide your body with a variety of vitamins and minerals – beets are the choice for you! You can enjoy beets either raw, roasted, boiled, steamed, sautéed, or even in chip form!
Sweet Potatoes: A classic fall favorite are vibrant, orange sweet potatoes that are LOADED with vitamin A which is important for healthy eye sight. Sweet potatoes can be enjoyed in salads, stir-fries, as toast, fries, and noodles.
Pumpkin: Pumpkins are loaded with vitamin A, are high in dietary fiber, and vitamin C. By roasting or pureeing pumpkin, you can create a variety of sweet and savory dishes! You can also roast the pumpkin seeds (pepitas) and enjoy them in trail mix, oatmeal, or salads.
Brussels Sprouts: Brussel Sprouts are a good source of dietary fiber, high in vitamin C, and a part of the cruciferous vegetable family which provide our body with disease-fighting phytochemicals. Roast, steam, or stir-fry your brussels sprouts with some olive oil, and your favorite spice seasonings!
